Belgian-style Witbier

This is the second batch of our popular Witbier. We made some minor tweaks to the recipe, including adding Spelt from Moon Family Farm in Horse Heaven, WA. This adds a bready aroma and creamy texture. Like the previous batch, this is a mixed culture fermentation with Brettanomyces, a wild yeast, which gives pleasant pear aromas and flavors. There are subtle notes of black peppercorn and orange zest, provided by freshly crushed Indian coriander.
