We fermented this sour ale with a bacteria that brings a slight funk and a tartness that doesn't linger on the palate. It also has a subtle saltiness on the finish. We added Mexican Pink Guava, which bring pleasant tropical fruit aromatics. The beer is very dry with a bubbly effervescence.
